


Our Story.
Jacobs Private Dining is an operation run by Noah Jacobs
– a Tennessee-born cook, who relocated to Jasper, Indiana in June 2024.

Noah’s cooking journey started as a kid when his mom handed him a cabbage knife, and put him to work cutting lettuce. In his home kitchen he learned the basics of cooking. Growing up, he gained exposure to southern recipes passed down from his mother and grandmother.

At 16, he was hired to his first job in food: making pizzas inside of a children’s arcade. Upon graduation of high school he started some more serious work in asian cuisine, with a job at a sushi/poke shop in Franklin, TN. There he honed his knife skills, and worked with high quality ingredients for the first time. After his time in sushi, he transitioned to BBQ to learn what it takes to be a pitmaster. The BBQ restaurant was Noah’s home for 3 years. There he mastered the pit, as well as cajun and southern cuisine. After BBQ Noah decided to go across the pond where he landed in Galway, Ireland. There he worked as a commis in a boutique pub located on Galway’s main drag. He learned under chefs of many different nationalities, gaining wisdom from them all. Each day he trained with classical techniques, and became drilled with the discipline of European Chefs and food theory/science.

After moving back to the states due to COVID, Noah started working at a popular bakery in Nashville specializing in croissant-style pastries. There he learned techniques of pastry dough, and eventually moved into the business side of things managing 6 of their bakeries. While living in Nashville for about 4 years, he was the sous chef of Private Chef, Tevyn Henry (@tevs.table) serving Nashville’s high-end clientele. While in Nashville, Noah met his partner, Mady. Their relationship eventually brought them to Jasper, IN, where they currently live. Mady now wears many hats at Jacobs Private Dining: sous chef, head baker, dish washer, graphic designer, photographer, and moral support.

Noah’s “why” is simple: He wants to bring fresh food and fresh techniques to the plates of Dubois County & surrounding areas.
We hope that Jacobs Private Dining can replicate the hard work that goes into all the food grown here in our community.
